The evening will bring together signature cocktails, creative tapas and live entertainment at Cercle Bar from 6:30 pm to 10:00 pm. Chapeau Palma will bring its Mediterranean-inspired cocktail identity to the resort as part of a collaboration marking the bar’s tenth anniversary. The event will feature several signature creations alongside cocktails from Cercle Bar and a tapas menu prepared by Executive Sous Chef Javier Hoebeeck.

Chapeau Palma brings signature cocktails to Formentor
Chapeau Palma will present four cocktails from its latest menu during the Sunset Sessions event.
Bartenders Mateo Tolosa and Rodrigo Álvarez will showcase the Tinder Martini, featuring grapefruit and passion fruit notes, alongside De Famoso no tiene nada, which combines citrus, smoky and floral influences.
Guests will also be able to try the Dirty Bamboo Highball, inspired by the character of Jerez wines, and Figoni, which incorporates fig leaf and red berry flavours.
The appearance comes as Chapeau Palma celebrates ten years of cocktail craftsmanship. Several recognised creations have been revived for its anniversary menu, connecting the bar’s history with its current approach to contemporary mixology.
The collaboration also adds a Palma-based hospitality identity to one of Mallorca’s most internationally recognised resort locations.

The menu will include crispy corn tortilla, red tuna carpaccio, cherry tomatoes, cochinita pibil taco and red prawn aguachile. Other options will include brioche steak tartare, a wagyu cecina sandwich and warm ensaimada.
Instead of fixed food-and-cocktail pairings, guests will be able to choose their preferred combinations.
The Sunset Sessions package will cost EUR 45 and include two drinks and two tapas-sized dishes.
